Our smallgoods range includes bacon available as rashers, lardons, slabs or whole luscious pieces. Available in two styles - Free Range Double Smoked Maple Bacon and our Salt and Pepper Cheek Bacon also known as Guanciale.

All our bacon smallgoods are prepared in house with hand blended seasonings and double smoked over premium natural woodchips. Using locally sourced Premium Hormone-Free, Free Range Pork guarantees the full bodied bacon flavour that only artisan bacon rashers can.

Every week we dry-cure and smoke beautiful butts of bacon fresh and ready for you to enjoy from local Farmers Markets or online ordering*.

Our Double Smoked Maple Bacon recipe results in rich smokiness and salty goodness, with a hint of sweetness. The perfect ratio of fat to meat creates a satisfyingly crispy texture making everything, from breakfast to BLT’s, baked potatoes to pasta more delicious. Dry cured with salt, brown sugar and pure maple syrup for a week with no injection bring preventing water from shedding into the pan.
